Our story

Our story

One grill on Al Wasl Road became a home for Dubai’s lovers of Levantine grills — same fire, same patience.

Jamra opened in 2014 with one grill and ten tables on Al Wasl Road. Salim Khoury came from Zahle with his grandmother’s recipe book and a habit he has never dropped: lighting the charcoal by hand every day before noon, and tasting every marinade before it goes into the fridge.

Today the grill is longer and twelve cooks work the kitchen, but the rules have not changed: real oak charcoal only, fresh meat from farms in the UAE and Oman, and mezze made every morning and never kept overnight.

The grill master

Salim stands at the grill most nights. He says the secret of good lamb chops is not the marinade alone but patience: medium embers, a turn every minute, and a pinch of coarse salt at the very end.

A home for guests

We built the dining room around the open grill so you can watch the skewers cook, added the terrace for milder evenings, and a private room for up to fourteen guests for family occasions and business dinners.
